This rich, creamy, decadent drink is perfect for the upcoming holidays. A little sprinkle of salt and some caramel drizzle makes this amazingly delicious. Check out the full video recipe after the break.
The first time I came across this drink was when I was working at Starbucks as a barista. It was during my second year there that they introduced the creme brulee latte, the salted caramel latte, and some peppermint latte that was pretty much the same except they made us put these fancy chocolate shavings on top. Like any Starbucks drink, it got super popular and everyone was drinking them.
But by that time I’ve pretty much gotten sick of sweet coffee drinks. In a way this was my own fault. I remember the first half year I was ordering crazy concoctions that had way too much sugar in them. I had this one tall drink that had 5 pumps of white mocha, 2 shots of espresso and some other crazy stuff. I think my goal was to get the barista to say as much things as possible (this was before they started using names). But after my first year I realized that it was way to unhealthy so I started just drinking steeped tea whenever I can.
Anyways when these three drinks came out I didn’t think much of them, I mean they were just more sugary drinks to go with people’s holiday spirit that had special toppings. But after trying the three drinks (you kind of have too since they want you to be able to describe the drinks to customers and stuff) my favourite out of the three was the salted caramel. I really liked how the saltiness enhanced the flavours of the buttery caramel and the rich chocolate.
Since then salted caramel has really grown on me, and I’ve been eating a lot of salted chocolate foods. Right now my favourite chocolate is the salted dark chocolate with caramel filling you can get from the artisan chocolate stores. While I was thinking of something to do for a Christmas video, I was eating some chocolate and boom! This recipe was the result.
The good thing about this recipe is that even without the toppings you have a great hot chocolate recipe. It’s pretty much a homemade hot cocoa powder, except you can control the amount of sugar that goes into it. So that is a huge plus! 1/3 cup unsweetened cocoa powder
1/2 cup sugar
pinch of salt
1/3 cup hot water
3 1/2 cups milk
3/4 tsp vanilla
Sea salt (to garnish)
1/2 cup packed brown sugar
1/4 cup half & half
2 tbsp butter
pinch of salt
1/2 tsp vanilla
Start by making the caramel. Combine all the ingredients in a small pan and simmer it on low until it thickens up, but is still liquid-y enough to drizzle. Add the vanilla and let it simmer for a couple of minutes then set aside to cool.
Now for the hot chocolate, combine all the dry ingredients and place it in a pot with the hot water. Set the heat to medium low and simmer it until it’s nice and thick. Keep an eye on it and stir constantly to prevent it from burning.
Pour in the milk and vanilla and heat it up until it just starts to simmer. Do not let it reach a boil!
Fill your favourite mug with the hot chocolate topped with whipped cream and the caramel drizzle. Garnish with the sea salt and enjoy!
